Yummy Summer Recipe: Grilled Pizza

I got this from my latest issue of SELF and I’m super anxious to make some!

Pizza with sausage, tomatoes, and basil

DOUGH
1 1/4 c. all-purpose enriched flour (though this might work with whole wheat flour too)
1 1/2 tsp active dry yeast
1 tsp salt
no-cal cooking spray

TOPPING
1 lb red and yellow cherry tomatoes, halved
1/2 lb turkey sausage, cooked and thinly sliced (you could use ground turkey and spice it up or even soy crumbles for less calories)
1 cup grated part-skim mozzarella
1 tbsp chopped fresh basil
1 tbsp balsamic vinegar (YUM!)
1 tbsp olive oil
1/2 tsp salt
1/2 tsp red pepper flakes

(personally I think I’m going to add some sprinkling of dried oregano too)

Mix flour, yeast and salt in a bowl. Gradually add 1/2 cup warm (110 degree) water until a soft dough forms. Divide dough into 4 portions. Using hands, roll dough into balls and coat with cooking sprea, then cover with plastic wrap and set aside to rise for 30-45 mins. (Plopping them down on cookie sheets works best for this, instead of wrapping the ball in plastic wrap - that would be too constricting I think.)

When ready to cook, place each ball of dough on a piece of waxed paper and flatten into a 4-inch circle. Coat grill with cooking spray and heat on high. Gently place dough onto grill and cook until it puffs up and the bottom stiffens (about 30 seconds). Flip and reduce heat to low.

Mix topping ingredients in a bowl and then divide among crusts. Cover the grill and cook until cheese melts, about 5 or 6 minutes. Slice into quarters and serve.

Here’s the best part:
391 calories PER PIZZA
15g fat (5.4 g saturated)
36g carbs
2.8g fiber (would be more with whole wheat flour or more fiber-rich veggie toppings)
26g protein (not sure, but I think that soy crumbles or even ground turkey crumbles would be more)

Tell me this doesn’t sound delicious?! I’d love to try it with mushrooms (that have been marinating in the balsamic and oil) and even asparagus tips or something for more fiber. :)

Can I suggest that using WW flour is certainly healthier but you might want to use whole wheat pastry flour so that it is processed just a bit more and has released more of the gluten for getting the stretchy dough you’ll want. Just make sure it isn’t enriched pastry. You’ll find ww pastry flour at many stores.

  2. You mean whole wheat by “WW” right? Not “Weight Watchers”? lol I know, stupid question, but I want to make sure it’s clear for everyone. :)

    Good idea - and please note that any changes to the recipe from the original is going to change the nutritional values - even if it’s just a matter of flour.
