The Ways of the Sweet Potato

sweet potatoesWorkOutMommy has a really informative post about the sweet potato and it got me thinking about the different ways I like to eat them. I really do enjoy them - they’re quite filling and much better for you than a regular potato.

Very often I’ll just slice it in thick slices, longwise, and brush it with some olive oil, sprinkle some cinnamon and a little sugar on top of the slices, and put them under the broiler when I’m making a steak or pork chops in the oven. You can also slice them up french-fry size, spray with some cooking spray and sprinkle with salt for baked sweet potato fries. (I’d say deep fry them, but that’s not so healthy!)

Of course baking them whole, and spritzing on a little ICBINB spray is always a good way to enjoy - even with a sprinkle of salt, just like you’d do a regular baked potato (sans cheese, bacon, and sour cream of course!)

Peeling, boiling, and whipping works too - a tab of butter, some cinnamon, brown sugar, and maybe a splash of cream makes it a yummy and sweet snack.

Boil up some thinner slices and put them in wraps with turkey, salsa, lettuce and cheese.

  1. I love Sweet Potatoes. Most of the time, i would steam it. Sometimes my mom would even make sweet potatoes porridge. :)
